Very delicious and was complimented by all the family. Might be too spicy for those who are sensitive, however a da lope of sour cream helps. Will def make again and again.

The cream cheese helps with thickening and because I used only about 2 ounces, I used a bit of beurre manie to thicken…2tablespoons butter:2 tablespoons flour…mix to a paste…add to chili when you have a good simmer. Adjust butter:flour to your preference of thickness. If too thick, add a bit of chicken stock.

Wow!! I had ‘assumed’ that ribs and tenderloin would be requested for New Years dinner during the Texas V Arizona college playoff.
My wife asked me if I ever made white chicken chili! It sounded sacrilegious. I mean REALLY chili w chicken and it’s white? But it’s her call this time. I went online and Google searched “white chicken chili”. Cooking Classy proudly stayed this was the best! Okay, challenge accepted.
Little to no deviation from the original recipe. I used great northern beans and an entire rotisserie chicken sans legs n wings.
I let it simmer for 2 hours,until gametime. I had baked a loaf of whole wheat honey n millet bread. No avocado at this point saving for wife n guests.With Irish butter on the bread and a spoon of the “white chicken chili” at the ready I took a bite!
Are you kidding ?? AMAZING! The flavors spread across my pallette and my eyes rolled back in my head. D A N G! How was that possible? So subtle and yet complex flavors popping endorphins in my brain. This chili is The BOMB!
You made a believer out of this Texan! AMAZING!

Great recipe. I used regular cream cheese and canned white corn. Didn’t have green Chilies but I did add a can of Rotel tomatoes with green chilies because we like things a little more spicy. Delicious !!

This is such a delicious chili. I followed the recipe exactly, except used cream cheese instead of Neufchatel, could not find it at the grocery store, and have made it twice this week. It’s simply the bomb. Thank you so much for sharing the recipe.
