Apple Cider Syrup is the autumn topping of your dreams. This syrup is sweet, sticky, and bursting with the flavors of apple cider. You can really taste the ripe apple flavor, blooming fall spices, and nutty sweetness of brown sugar. From the months of September to January you won’t even want your regular maple syrup!

When fall arrives, I can’t stop thinking about my favorite autumn flavors. Pumpkin, butternut squash, nutmeg, cinnamon, and of course, apples! Whether it’s apple pie or fresh apple cider, apple is a key ingredient in any fall menu. I wanted to reimagine apple cider to get even more of that sweet and tangy flavor this season.

Apple Cider Syrup Recipe

I had a dream of a perfectly spiced apple cider syrup that I could enjoy over waffles, pancakes, French Toast, apple pie, spiced cakes, yogurt, oatmeal, or even just vanilla ice cream! I love making homemade syrup, and with a gallon of cider on my hands, I thought I could make it happen. (Apple juice will work, but you’ll want to use a cinnamon stick and additional spices so you don’t lose that rich flavor!)

This syrup goes perfectly with the Pumpkin Waffles I shared here. This will quickly become your favorite fall syrup! It’s easy and it is incredibly delicious! If you are only serving a few you can definitely half the recipe because you likely won’t need two cups. But you also might want to make a large batch to keep plenty on hand for all of your sweet fall recipes. Simply store the apple syrup by spooning it into jars and keeping it in the fridge. This recipe would also make an incredible neighbor gift—spoon it into a mason jar, tie it with a pretty ribbon, and stick a fun gift label on the front!

Apple Cider Syrup

The perfect fall syrup! Deliciously sweet and spiced and brimming with apple cider flavor. Makes about 2 cups.

  • In a medium saucepan whisk together brown sugar, cornstarch, cinnamon, allspice, ginger, cloves and salt until cornstarch is evenly distributed. Stir in apple cider and apple cider vinegar and set mixture over medium-high heat. Bring to a boil stirring constantly. Allow to boil 1 1/2 minutes while continuously stirring, then remove from heat, stir in butter and allow to cool until warm.
  • Store in refrigerator in an airtight container, rewarm in microwave before serving.
