The recipe was laborious somewhat, but got good reviews from my men! I sprinkled some chopped pecans on one of them for myself. The recipe made 4 1/2 large regular waffles. Served with maple syrup. One of my grands ate them without butter or syrup! Sausage and poached eggs on the side! I’ll save this recipe for future fall servings! Thanks for the recipe!

The recipe was very forgiving, too! I used a rather thick pumpkin puree and had to substitute milk+lemon juice for buttermilk, but they still turned out beautifully!

Just what pumpkin waffles should be. Moist, soft, and fluffy. They weren’t very heavily spiced, which is appropriate because after all, they’re called pumpkin waffles, not “pumpkin spice waffles”.
These were great with butter and brown sugar on top, or with chocolate chips. I’d like to try them with cinnamon and applesauce too, and maybe with clotted cream and berries. If you cook them a little too long, no problem! They develop a nice crunchiness and work perfectly as hot waffles to put gelato on!

This is a great recipe, they were a big hit. I made a few substitutions that made sense to me and I was super happy with the results.

I substituted 1 cup of whole wheat flour for regular, melted butter for oil, tripled the vanilla and used Mexican vanilla, and added about a half teaspoon of ground cloves.

Thank you for sharing this, it will now be part of our special breakfast rotation.
