Hi Amber – I’m glad you found a way to put your oats to good use! I’ve found I don’t like oatmeal porridge style lately either but perhaps you’d like baked oatmeal it’s my go to.

There’s a snow storm brewing and we’ve decided to plan our treats ahead of it. We tried this recipe because it’s the only (or perhaps the first, then we stopped there) that called for rolled oats.

We followed the recipe, exactly as written. The only changes were the baking time from 9 minutes to 16. Every oven is different but my goodness! These were DELICIOUS! It’s so much better than the store-bought! Might even use as a base for oatmeal craisin cookies!

Thank you! No, seriously, because we just purchased a 10 lb box of rolled oats and neither of us eats hot cereal. We do like cookies. And now I don’t feel the stress of 10 pounds of oatmeal in my cupboard wasting away. And that frosting, YUM!

Unfortunately I don’t think there would be a very good substitute for that here.

LOVE these delicious cookies! Thank you Jaclyn! I love a good oatmeal cookie, and this one is perfect. The frosting sweetens it up nicely, and I figured out I want to make mine a bit smaller for my gift giving platters. Thanks for the newest addition to my Christmas cookies this year!
