Alfajores {Dulce de Leche Sandwich Cookies}

Alfajores are tender sandwich cookie filled with a layer of dulce de leche and commonly rolled in coconut. They are a popular cookie found in many Latin American countries and when packaged you can often find them dipped in chocolate. They have long been one of my families favorite cookies!

My Favorite Alfajores Recipe

I first discovered these gourmet cookies thanks to my Husband. He lived in Argentina for a few years and they were one of his favorite treats there so of course I had to learn how to make them.

I can't understand why these delicious dulce de leche filled, shortbread-like cookies aren't super popular here in the United States. These cookies melt in your mouth!

Surprisingly enough I like these cookies best the second day. Just after adding the dulce de leche to cookies are still nice and crisp but after resting the moisture of the dulce de leche soaks into the cookies and makes them deliciously tender. Which would you prefer crisp or soft and tender?

This Caramel Soaked Almond Cake (AKA Toscaka Torte) is all of my dessert dreams come true! It's a cake that's worthy of any celebration and I love that it's brimming with plenty of that irresistible caramel flavor which is perfectly paired with the almonds. There's no question this is a cake I'll make again and again, it is oh so tempting!

I love that this is something different from the cakes I normally make. Even though there's no frosting and it's only a single layer it's still one of the most delicious cakes I've had!

We were instantly smitten by this cake and all of it's rich flavors. I also love the combination of textures - that soft, dense caramel soaked cake finished with those crisp flaky almonds. Mmm MMM!

Browned Butter Cinnamon Dulce De Leche Stuffed Chocolate Chip Cookies are luxurious, with a depth of flavors and a surprise caramel filling that will have everyone talking. Browned butter lends a nutty flavor to the dough, which is enhanced with a dash of cinnamon for churro vibes. Chocolate chips add some richness, and then the melty dulce de leche hidden in the center makes this cookie a total show-stopper.

I have a chocolate chip cookie addiction, just like everyone else in this world. Okay so maybe not all of you are addicted in the same way that I am but I constantly crave chocolate chip cookies. If I'm going to make cookies more often than not it's going to be chocolate chip-related.

Dulce De Leche Stuffed Chocolate Chip Cookies

The salted browned butter is probably my favorite so I've adapted that recipe to be stuffed with dulce de leche and swirled lightly with cinnamon throughout. It's sort of my idea of a Latin spin on the browned butter chocolate chip cookies. (If you love dulce de leche cookies, make sure you try my Alfajores! They're dulce de leche sandwich cookies that are to die for!)

The combination makes me think of churros and dipping them in dulce de leche and melty chocolate, oh yum!

These cookies are caramel-y sweet which pairs well with a hint of cinnamon, they're nutty (thanks to the browned butter) and overflowing with an abundance of various chocolates, then once you bite through all that other goodness and get to the dulce de leche - you'll realize cookie dreams do come true. Dulce de leche (and similarly sweetened condensed milk) is one of the greatest foods ever. It's true.

I love homemade dulce de leche, but store-bought dulce de leche will work just as well!
