The Best Harvest Bowls

This recipe is a copycat recipe with inspiration from Sweetgreen's harvest bowl but with what I consider a few even more delicious additions.

In place of balsamic dressing I found honey lemon dressing tasted better and was more fitting, feta was overall more preferred among tasters versus goat cheese, and Brussels sprouts add one more veggie and will help get more servings out of it. Pan seared chicken was also used in place of roasted for a quicker option.

Simply put we are obsessed with these meal in one bowls, they are one of the tastiest healthy fall recipes and we just can't get enough of them! Once you try them you may just start making them weekly like we are lately, and you can switch them up with different toppings (see ideas below).

They are loaded to the max with flavor and wholesome goodness. They make an excellent dinner and leftovers are perfect for meal prep for lunch the following day.

What is Chicken Schnitzel?

Schnitzel is a German and Austrian dish made with meat that is pounded very thin then it's coated in a standard three layer breading including flour, eggs and some type of bread crumb (such as bread crumbs, matzo meal or in this case panko), after that it's fried in a bit of oil until browned and cooked through.

To me chicken schnitzel is like a grown up, fancier version of chicken nuggets with a similar taste and texture. Just simple but delicious, with an excellent texture.

It's a straightforward process to follow and easier to make than you'd think. And I'd say yes it is definitely worth the extra dishes it takes to bread the chicken.

It is a dinner item my family has requested be added to a regular rotation, and I have the feeling yours may agree with that too!

Lentil Salad

This makes a great lunch or dinner side. It has an abundance of freshness along with a good heartiness to it, and it's easy to make.

You'll find it has a great blend of textures and flavors and it pairs beautifully with chicken or salmon.

You can use a variety of herbs based on what you have. I always like to include parsley then for the second herb addition opt for either cilantro, basil or mint - each will give a different flavor profile so it's nice to switch things up.

Serve it room temp or nice and chilled for a refreshing salad (just keep in the fridge within 2 hours of preparing).

What is Chicken Cordon Bleu?

Cordon Bleu is a dish with Swiss origin that is a derivative of schnitzel.

Chicken cordon bleu specifically is made of chicken that has been pounded thin, layered with ham slices, and topped with Swiss cheese. They layers are rolled snug or folded over, after which it's breaded with flour, egg and dried breadcrumbs. And to cook it's and either pan fried or baked.

In the United States it was a dish that was very popular between the 60's and 70's. In my experience as a kid growing up in the 90's I commonly remember chicken cordon bleu casserole which was a simplified version (which wasn't quite as good, but mimicked the same flavors).

You can serve it whole (note in this recipe though you'll only get four servings if doing so), or you can slice and layer them on a platter domino style. I prefer the later as you'll get more servings and presentation is eye catching with those pretty swirls.

And the creamy honey mustard sauce, which I believe is a staple to the dish, should be poured over each individual servings right before it's served (so the breading doesn't get soft, because that crispy crunch is a crowning finish!).

This dish is perfect for entertaining or for the holidays. It may be a little bit of extra effort but very well worth it!

Easy Balsamic Dressing

This classic balsamic vinaigrette is a must in your recipe collection.

For this recipe you only need 5 ingredients (plus the standard salt and pepper)! And the prep couldn't be easier.

You don't even need to remove the skin from the salmon. It will just easily peel away after baking.
