Easy S'mores Pie Recipe

Are you ready for a new favorite pie? With this dessert, you get all the classic s'mores flavors blended into a three-layered incredibly decadent pie that's served perfectly chilled and refreshing!

Usually, we all think of s'mores as a summer dessert, but thanks to this pie you can have a s'mores dessert any day of the year when the craving strikes. I love taking it to Thanksgiving dinner, because you definitely need some chocolate to compliment the pumpkin pie. Plus, this is an easy pie to make ahead of time and doesn't require the oven!

It begins with a simple homemade graham cracker base (I include a hint of salt to balance out the sweetness of the pie), then it's layered with a silky smooth chocolate filling that melts in your mouth, and topped with a meringue (the kind that will remind you of fluffy marshmallows).

And last but not least—it's toasted to a stunning golden brown finish with a culinary torch!

The only difficult part of making this pie is waiting to dive in. There may just be a slice missing when you take it to the party, it's just too irresistible!

Perfect Snickerdoodle Cookies

This is my idea of the best snickerdoodle cookie recipe, and there's no chilling dough required!

Who doesn't get the cookie cravings? When those hit this is the perfect cookie to make, with consistently reliable results.

They have the perfect satisfying flavor with an abundance of tempting cinnamon, the tender texture is spot on what you want in a cookie, and the thickness meets perfectly in the middle. We avoid flat pancake-like cookies here while not making them overbearingly thick either.

They're deliciously buttery and moist throughout, you won't find a dry bite here. And the level of sweetness is just where it should be.

You just have to try these! They're everything look for in a cookie and then some.  Plus they're a treat everyone can agree on, kids love these and adults love them just as much.

They are just one of those classic desserts that have been around forever and everyone get's excited when the see and smell these aromatic cinnamon sugar coated cookies.

You just can't go wrong with a batch of these. Trust me, they'll disappear in no time!

Meringue Cookie Recipe

My kids love meringue cookies, I mean who wouldn't? They taste like candy and they pretty much melt in your mouth.

You'll love that they keep really well and they're a fun change from the typical cookie. Plus they're fun to customize with other flavors, decorate with festive sprinkles, or dip in dark chocolate after baking and cooling.

Plus the plain meringues are naturally low in calories, not that we're really counting this time of year anyway though right?

I'm also crazy about all those little bits of cranberries in each bite! Chopping the dried cranberries up first ensures that their flavor is evenly spread out - plus that way you don't get big chunks in some bites and none in others.

And here I chose to use the cherry juice infused cranberries. If you can't find the cherry version the plain will work great as well. I just love that triple flavor combo of cranberry, cherry and chocolate.

Right about now I'm just wondering where these cookies have been all my life. They are definitely going to be a new go-to holiday cookie!

The adults loved them and the kids loved them too. The flavor reminds me something of cherry chocolates in cookie form.

We all loved them so much that I decided I had to share the recipe with you too so I made them again the very next day, and no one here is complaining about that. I shared a similar fruit pizza cookie recipe on here a few years ago but the other are a soft Lofthouse-texture-like cookie with a lemon frosting. These are a chewy sugar cookie with a vanilla cream cheese frosting. Both are good but I think these are my new fav.

Sugar Cookie Fruit Pizzas (Chewy Version)

These are the perfect refreshing summer treat! Soft and chewy sugar cookies are topped with a rich cream cheese frosting then decorated with colorful fresh fruit. No one can resist these! 

  • 2 3/4 cups (390g) all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 tsp cream of tartar
  • 1 1/2 cups (310g) granulated sugar
  • 1 cup (226g) unsalted butter, (softened)
  • 1 large egg
  • 1 large egg yolk
  • 2 tsp vanilla extract
  • Fresh fruit of various colors*

Cream Cheese Frosting

  • 5 Tbsp (70g) salted butter, (softened)
  • 8 oz (226g) cream cheese, softened
  • 2 cups (250g) powdered sugar
  • 1/2 tsp vanilla extract
  1. For the cookies: Preheat oven to 350 degrees. In a mixing bowl whisk together flour, baking soda, salt and cream of tartar for 20 seconds, set aside.

  2. In the bowl of an electric stand mixer fitted with the paddle attachment, cream together sugar and butter until combined. 
  3. Mix in egg, then mix in egg yolk and vanilla extract. With mixer set on low speed slowly add in dry ingredients and mix just until combined (dough with will thick, stop mixer and mix by hand to get flour at bottom if needed).
  4. Scoop dough out 1 1/2 Tbsp (about 33g) at a time and shape into balls. Transfer to a baking sheet lined with parchment paper or a silicone liner, spacing cookies 2-inches apart. 
  5. Bake in preheated oven 10 - 12 minutes (cookies should appear slightly under-baked). Remove from oven and allow to rest several minutes then transfer to a wire rack to cool completely.
  6. Repeat until all of the dough has been used up. Once cookies are cool (and just before serving) frost cookies with cream cheese frosting and top with fresh fruit.

  7. For the frosting: In the bowl of an electric stand mixer fitted with the paddle attachment cream butter then blend in cream cheese and mix until smooth. Add powdered sugar and vanilla and mix until light and fluffy.

  • *If you don't want buy as many kinds of fruit as I did I'd recommend using diced strawberries, blueberries and diced kiwi.

Are you guys cookie'd out yet? Because I definitely am not :)! I've been sharing cookie recipes like crazy and still have another cookie recipe to share next week too, Lemon Snowball Cookies, they are amazing! As are these perfectly flavored eggnog snickerdoodles. That's right you guys, all the flavors of eggnog combined with all the best things about a Snickerdoodle cookie, and BAM! You get these! And they are dangerously delicious!

Eggnog Snickerdoodles | Cooking Classy

Crazy enough, these cookies actually contain no eggnog. I felt if I added it we'd end with more of a cakey snickerdoodle and with these, I wanted something more soft and chewy because to me that's the way a true snickerdoodle should be (plus that must-have, lightly crisp outer layer from the sugar coating that slightly melts while baking. I just love biting through that!). They get their eggnog flavor from a fair amount of nutmeg and also from the rum extract. Rum extract can be found near the vanilla extract in most grocery stores. It's a must in these cookies so be sure not to skip out on it. Plus if you buy it and need more uses for it you can try any of these recipes here.

Another fun way to reinvent this classic Snickerdoodle cookie would be to use red sugar in your cinnamon-sugar mixture! Roll your cookie dough ball in the mixture then place on a silicone mat on your cookie sheet to bake. Sprinkle additional sugar after baking if needed!

If you really wanted you could leave out the cream cheese (and also reduce the vanilla/almond extracts if you do) and just have a sweetened whipped cream topping.

I'm just partial to the cream cheese whipped cream topping ever since I made these cupcakes last year.

It kind of reminds me of cheesecake and cheesecake is one of my favorite desserts (and probably half of the worlds, who doesn't love a decadent cheesecake?), so it's hard for me to just keep it basic when I can upgrade it a little.

Whatever the celebration, be sure to bring some of these cupcakes along. And maybe make two batches, they'll go quick :).
