This dreamy cornbread is an old tried and true recipe. I shared this way back in 2012 and decided it was time to revisit a favorite in case you've missed it.
It's nothing like that dry mealy, lifeless cornbread we often get. It's fluffy, moist, tender, flavorful and deliciously sweetened with both honey and sugar (with an adjustable option depending on how sweet you like it).
Of course it's the perfect accompaniment to soups, chilis, roasts, bbq's and so forth but it is so good that it will even pass as a tempting dessert (just go for the sweeter option).

This cornbread is so soft and moist, I hate dry cornbread so of course I made this to be completely the opposite. I love that this has plenty of pumpkin flavor - you don't have to guess what flavor of cornbread it is, and the whipped cinnamon honey butter just takes it over the top!

]]>I know my 4th of July desserts could be more festive but this year I'm not really color coordinating with the holiday and just going with something fun and different, and of course something with amazing flavor! I made these Pineapple Upside Down Cupcakes a few months ago and I know they wouldn't end there.
I love cupcakes and I love when you can convert a traditional cake into an individual cupcake, like these German Chocolate Cupcakes or these Cheesecake Cupcakes. People always just love them that much more and serving them up is cleaner and easier.
I wanted to stick some sparklers in these for pictures but my husband thought I'd burn the house down, but for company, I plan on making them again and sticking some sparklers in them and lighting them up outside. I'm totally festive you guys. Always :). I do love all the fresh fruit flag pizzas too so maybe I'll have to make one of those, and maybe next year I'll actually share a recipe for one of those on time. I just never seemed to get around to it this year.
These are equally as good though and you'll have people swooning over them! Peach Upside Down Cakes need to find a place on your menu ASAP! They are simply heavenly! Think peach cobbler, meets sweet cornbread, meets upside-down cake all made into one decadent cupcake. Pretty epic right? They are.

]]>I'm a huge fan of anything that is able to be lightened up that can actually outdo its less healthy, original opponent. This muffin is just that! It is my favorite cornbread, EVER! I adapted it from my Lightened Up Cornbread Recipe. I made these because I needed a shorter cooking time than that of the 8x8 pan version since dinner was close to being done, so I thought muffins would be perfect. Any version of this, muffin or cornbread will disappear in a flash.
I say these are lightened up because your average cornbread uses a whole stick of butter, with this recipe I use some applesauce as a source of moisture therefore requiring less butter. These are my idea of the most moist and tasty cornbread muffins ever!
Then when they are topped off with freshly whipped honey butter, awww my mouth is watering. If you are lucky enough to have any leftover after dinner they make an excellent breakfast the next morning. That's one thing I love about these muffins, they are a perfect side dish to dinner, a great breakfast and even an amazing dessert. They have just the right amount of sweetness. They are making me crave a good Southern Ham meal with some of my Mom's perfect mashed potatoes with ham gravy, mmmm. Good luck stopping at just one muffin, I never can.
