Easy Sugar Cookie Icing

When I've made sugar cookie icing in the past I've gone with royal icing, which uses dried egg white powder. But who wants to buy a specialty ingredient that's hard to find that you've only got one use for, right?

So a few weeks ago I tested a different icing that uses corn syrup instead and from here on out it will definitely my go-to.

There's so many reasons to love it: It's unbelievably easy to make, you just need a bowl and a fork. You'll find it tints nicely holding vibrant colors (and a little food color goes a long way). It pipes beautifully (once you get the right consistency), and it sets to a nice hard layer making it suitable for stacking.

No unique ingredients and you really don't even need special equipment (like a piping bag and tip) if you don't need detailed shapes. I've even used a quart size freezer bag with success, just seal the bag and cut a tiny tip from one corner for that option.

It's the perfect icing for all your holiday and celebratory sugar cookies!

For a streamlined process just be sure to have everything measured and tools ready before you begin to make things easier (such as lining and greasing the pan because this sticky mixture likes to begin to set quickly). While it's true that peanut brittle can be very temperamental it's also true that by following a straightforward method and helpful tips along the way you'll realize it's easier to make than you've likely heard.

I made six batches today (12 cups of sugar and 6 sticks of butter later) taking notes and learning things along the way until I got it to taste just like I remember.

It starts out with the most basic ingredients and finishes with a classic nostalgic treat that's sure to tempt and satisfy those sweet tooth cravings.

Just don't overdue it (eating too much) like I always did as a kid. Sugar rush. But oh such a memorable, classic holiday treat I always looked forward to every Christmas!

Everyone of us absolutely loved this caramel popcorn! And I loved how easy it was to make. You just boil together a few ingredients then toss it over the mix of popcorn, cereal, pretzels and pecans and bake it in the oven for 30 minutes. It's probably a bad thing it's so easy to make because it's just so dangerously good!

Crunchy Caramel Corn Snack Mix

This addictive snack is perfect for parties or gifting! It's easy to make and always a crowd favorite! No one can resist this sweet and salty, crunchy, caramel snack blend.

  • 7 cups popped plain popcorn*
  • 4 cups crispy rice cereal, (such as Chex)
  • 2 cups mini pretzels
  • 1 1/2 cups Fisher Pecan Halves
  • 1/2 cup unsalted butter, (diced into 1 Tbsp pieces)
  • 1 cup packed light brown sugar
  • 1/3 cup light corn syrup
  • 1 pinch salt
  • 1 tsp vanilla extract
  • 1/4 tsp baking soda
  1. Preheat oven to 350 degrees. Line a rimmed 18 by 13-inch baking sheet with parchment paper or a silicone baking mat, set aside.
  2. Add popped popcorn, rice cereal, pretzels and pecans to an extra large mixing bowl, set aside.

  3. Melt butter in a medium saucepan over medium heat. Add in brown sugar and corn syrup and bring mixture to a boil stirring constantly. 
  4. Once it reaches a boil, reduce heat to medium-low and allow to boil, without stirring, for 4 - 5 minutes. 
  5. Remove from heat, whisk in vanilla and baking soda (mixture will bubble up and foam). Immediately pour mixture over popcorn and quickly but gently toss to evenly coat. 
  6. Spread mixture evenly into prepared baking sheet. Bake in preheated oven 15 minutes then remove from oven and toss mixture then spread into an even layer. 
  7. Return to oven and bake 15 minutes longer. Remove from oven and let cool then break into bite size pieces.
  1. *Don't use flavored, buttered or salted popcorn. Remove any un-popped kernels after popping.
