What are Huevos Rancheros?

Huevos Rancheros is a traditional Mexican dish made up of warmed corn tortillas, a cooked salsa (red tomato salsa or green tomatillo salsa), and fried eggs. It is pronounced way-vows-rhan-che-rohs and translates meaning rancher's eggs.

They are frequently served with refried beans or black beans on top or as a side, and you can garnish them with various toppings.

This version is easy to prepare and is fairly quick compared to other versions. That is thanks to a food processor, because we skip the option of roasting the tomatoes and veggies for speed (though there's no lack in fresh flavor), and here  the recipe calls for ground chili powder rather than managing the steps of whole dried peppers.

This Huevos Rancheros is practically perfect and such a welcome comforting way to start the day. You may even likely find you are craving it for not only breakfast but lunch or dinner too!

Make it a complete meal served with chorizo or sausage, and don't forget that side of beans.

Chicken Tinga Tacos

Tired of the same taco recipe over and over? This is a delicious, flavorful recipe to brighten up that same old rotation.

This stove-top simmered chicken tinga makes an impressive taco filling and there's really not a whole lot to it. It cooks in 30 minutes meaning you don't have to wait hours and hours like you do for a shredded beef or pork taco filling.

If however you do have more time, you could easily get away with simmering it low and slow in the crockpot slow cooker or instant pot instead (it should be done in about 3 to 4 hours on low heat), which should make it even easier to shred chicken quickly.

Is it Spicy?

Yes, chicken tinga is deliciously spicy because of the added chipotle chiles in the dish. I've listed to add 1 - 3 chipotle chilies to taste depending on the heat level you prefer (we love it with 3!).

Then there is a swap noted in the substitutes below if you want a milder version with fewer spices.

As it starts to get cold the only thing I want to eat is soup...oh and good carbs (rolls, biscuits, cornbread, homemade bread, etc) and sweets (always sweets). Something about fall just needs good comfort food.

I absolutely love fall and I love all the veggies and fruits in season.

Yes, it's hard to say goodbye to all those deliciously sweet summer berries and that juicy watermelon, and of course the fresh corn on the cob and the tomatoes, but fall has so much goodness to offer like sweet potatoes, brussels sprouts, squash, kale, spinach, apples, pomegranate, pears, and canned pumpkin (that ones a joke but also serious in a way.

Yes canned pumpkin is always in season, at least where I live, but I use it probably twice a week in October so it's basically in season for me).

I love that this soup uses both kale and sweet potatoes, it's the perfect fall combo. And the sausage just makes things fast since it's pre-cooked and it keeps this soup hearty (you can also use beef/pork sausage here too).

This soup is like the fall spin on this other recipe I shared. It has an entirely different almost unexpected flavor, which is nice though to switch thing up. I love what the spices add as well as that heat from the chipotle chili powder.

I used 1/2 tsp of the chipotle powder and it was about all my husband could handle. My kids would never be able to handle that much though so I basically had to strain their broth off and add new. Next time I'll just add the heat to my portion since I love it and I'm sure I'll go with a fair amount.

What Should I Serve with this Soup?

The perfect side to this is fresh cornbread. If you want to be a cheater like I have been lately I'm really liking the Fleischmann's cornbread mix. Did I just admit that? I'm using box mixes? Yeah on occasion and I still pull out the Betty Crocker brownie mix sometimes too.

I like the cornbread mix because my kids can make it while I'm making dinner during busy weeknights.

The trick though is to add in 2 Tbsp of applesauce (in addition to the 1/3 cup melted butter it calls for) so it's moist. And if you have time this homemade version is definitely my favorite. Soup and good carbs, yes, it's the perfect fall meal.

Turkey Sausage, Kale and Sweet Potato Soup

An easy, hearty soup recipe made with smoked turkey sausage, kidney beans, fresh nutritious sweet potatoes and kale and spices. It's a festive, colorful soup that's perfect for fall.

  • 1 Tbsp olive oil
  • 1 1/2 cups chopped yellow onion ((1 medium))
  • 1 large sweet potato ((about 1 lb) peeled and diced into small cubes (3 cups))
  • 13 oz. fully cooked turkey sausage, (cut into 1/2-inch thick slices)
  • 4 cloves garlic, (minced (4 tsp))
  • 6 cup low-sodium chicken broth
  • 1 tsp paprika
  • 1 tsp ground cumin
  • 3/4 tsp ground coriander
  • 1/4 tsp chipotle chili powder ((more or less to taste))
  • Salt and freshly ground black pepper
  • 4 cups chopped fresh kale
  • 1 (14.5 oz) can dark red kidney beans, (drained and rinsed)
  1. Heat olive oil in a large pot over medium-high heat. 
  2. Add onion and saute 5 minutes then add sweet potato and sausage and cook, tossing occasionally, 3 minutes. 
  3. Add garlic and cook, tossing occasionally, 2 - 3 minutes longer. Pour in broth, then add in paprika, cumin, coriander, chipotle chili powder and season with salt and pepper to taste. 
  4. Bring to a light boil, then reduce heat to medium low. Cover and simmer, until sweet potatoes are nearly tender, stirring occasionally, about 5 - 10 minutes. 
  5. Add kale and kidney beans and cook 5 minutes longer. Serve warm.

Honey Chipotle BBQ Chicken Skewers | Cooking Classy

This time, I was so excited to try these grilled chicken skewers made with a new product that recently hit the shelves at Walmart, KC Masterpiece® BBQ Sauce Mix and Dry Rub. I love things spicy so I made my version to have a good kick to it with the delicious honey chipotle combination. It goes so perfectly with grilled chicken with its blend of sweet, spicy, and a little bit smoky, and it most definitely left me craving more.

I love how versatile these mixes are! They come in three varieties, there is Original, Honey, and Habanero, and then with each version you just follow the instructions to add a liquid of your choosing, such as fruit juice, soda, water, or bourbon. I've already tried two varieties because I loved the first so much (I tried the Honey and the Original. With the original I actually just tried it with water and a little apple cider vinegar and it was so tasty)! I also loved how easy it was to make and that I was able to give it my own personal spin for on-the-grill chicken kabobs. It would also be delicious in a grill pan if you don't have skewers!

My whole family agreed we loved this BBQ sauce and we will be eating it again and again this summer spread over chicken, pork, and beef (I also can't wait to try it in pulled pork or pulled chicken sandwiches)! This sauce is true to the saying, "secret's in the sauce". This stuff is finger-licking good and it's destined to be a crowd-pleaser!

My mom and my kids, who don't like spicy foods, had no complaints about the slight spiciness with these slow cooker pork tacos.
