Then from there if you want an upgrade you can add some of your favorite toppings, then just let the caramel set in the fridge briefly and you've got a perfectly tempting treat that no one will be able to resist!

I've made a chocolate version of these cookies but I wanted to go with a traditional vanilla version - and they will remind you so much of a Twix candy bar!

I mean I normally have a really hard time picking favorites but these cookies are definitely one of the best I've made this whole year and that's saying something because I've made a lot of cookies I've really, really loved.

There's just something about these though. The coconut, the salted caramel, the melt-in-your-mouth buttery goodness. These cookies speak to me. In other words someone please hide them!

I just had to quickly take most of them to neighbors because I knew I couldn't resist these ones (then I later heard from my neighbor that she hid them away for herself lol. She had the same problem as me).

There are a few extra steps with these since they need to be rolled, indented and filled but those couple of extra steps make them an over-the-top, worthy of any holiday, kind of cookie. To keep them things from getting too messy, I like to use one hand for rolling in the egg, then the other for rolling in the coconut - kind of like when you bread chicken.

Another thing that helps is to press the coconut onto the cookie to help it adhere, if you just roll it through the coconut it doesn't stick all that well. And I chose to just chill these cookies directly on the baking sheets, but you can definitely chill them on plates or in containers if you don't have room for two sheet pans in your fridge.

Then just transfer them to the baking pans after they've chilled and bake as directed.

Obviously a highlight of the cookies is the course sea salt. I've got salt on my mind lately since last week I had the opportunity to attend Morton Salt's Next Door Chef event in New Orleans along with several other guests. It was a fun dinner experience where they converted someones home into an actual pop-up restaurant for a day.

Of course,  my favorite part of the meal was the Coconut Caramel Budino with Grilled Mangos and Morton Kosher Salt which was served for dessert. It was dreamy so I knew I needed to use that combination again to make something for the holidays, and that's how these cookies came about.

Acclaimed chef Nina Compton coached a home cook and then this cook prepared an incredible meal for us in which different types of Morton salt were used. At the event we tried a number of inspiring dishes where we could taste how different types of salt transformed each dish, from appetizer and drinks, to side dish, to the main dish and then onto dessert.

Salted Caramel Coconut Thumbprint Cookies

Tender buttery thumbprint cookies are coated with sweet shredded coconut and filled with salty decadent caramel. Such a delicious cookie recipe!

Cookies

  • 1 3/4 cup (150g) sweetened shredded coconut
  • 1 large egg
  • 1 cup (226g) unsalted butter, (cold and diced into small cubes)
  • 1/2 cup (108g) granulated sugar
  • 1/4 tsp Morton Fine Sea Salt or table salt
  • 2 tsp real coconut extract
  • 2 cups (283g) all-purpose flour

Filling

  • 28 (226g) soft caramels, (such as Kraft)
  • 3 1/2 Tbsp heavy cream
  • Morton Coarse Sea Salt, (for topping)
  1. For the cookies: Preheat oven to 350 degrees. Line 2 baking sheets with parchment paper or silicone baking mats. 

  2. Add coconut to a small mixing bowl. Add egg to a separate small mixing bowl and whisk well until blended. Set aside.
  3. Add butter and sugar to the bowl of an electric stand mixer fitted with the paddle attachment. Sprinkle fine salt evenly over butter and sugar then mix on medium-low speed until well combined.

  4. Mix in coconut extract. With mixer on low speed slowly add in flour and mix just until combined.

  5. Scoop dough out in 1 even tablespoon at a time and shape into balls. Roll each dough ball in egg mixture then in coconut mixture (press coconut onto cookies to help it stick better). 
  6. Transfer cookies to prepared baking sheets spacing at least 1-1/2 inches apart. Make indentation in each cookie with thumb or forefinger. Transfer baking sheet to freezer and chill for 10 minutes, or refrigerate 30 minutes. 
  7. Transfer 1 baking sheet to oven and bake for 10 minutes. Remove from oven and re-indent cookies using the back of a rounded 1/2 teaspoon*. 

  8. Return cookies to oven and continue to bake 6 - 9 minutes longer until the coconut is golden brown on edges and cookies have baked through. Cool on pan for several minutes then transfer to a wire rack to cool completely.
  9. For the caramel filling: Add caramel to a medium microwave safe bowl. Pour in cream. Heat mixture in microwave in 30 second intervals, stirring well between intervals until melted and smooth.
  10. Spoon caramel into indentations in cookies. Sprinkle caramel lightly with sea salt before it starts to set. Store cookies in an airtight container at room temperature.

  •  At this point, if the coconut is browning too much your oven probably cooks too hot, but you can just tent the cookies with foil and proceed as directed.

Early on I paid close attention to how to make the perfect s'more over the hot coals of a fire (big flames never work nearly as good), rotating the marshmallow at just the right time to get that perfectly golden brown exterior.

Now half the time I just make them over my stove top burner (or over a grill or in the oven with a broiler!) because I want to enjoy s'mores all year long, half the time in the summer I don't want to build a fire just for a s'more. In my opinion, the indoor ones taste basically the same, especially if you can toast them just right. It's more about the fun of making them over a fire really. Although, I do love to bake them in my house because I love that sweet aroma of toasted marshmallows filling the air.

The possibilities with s'mores are endless. Of course, the original classic S'mores are always amazing and I can never stop at just one, but if you want to try some of the best S'mores of your life and if you want to impress then explore these new flavors! No Bake Cheesecakes with Salted Caramel Sauce | Cooking Classy

No Bake Pumpkin Cheesecakes Recipe

Now for this post, I just have to say it. I really don't like these photos. But, these cheesecakes were so good that I just had to share anyway. I took pictures twice, yesterday then again today and I'm just not getting the photos to turn out how I'd like (for example, that caramel sauce in the second and third pic - yeah it looks artificial but it's real). These dark rainy days are just that, dark out. Frustrating but on a better note, since I made these two days in a row that means I get to eat them two days in a row! I'll never complain about eating cheesecake. Especially when I don't have to bake cheesecake!

I post cheesecake recipes and other various cheesecake-inspired desserts quite a bit. Cheesecake and ice cream and anything chocolate are all probably my favorite desserts, so I make them way too much I'm sure. Last week I posted Pumpkin Cheesecake Breakfast Smoothies (that are actually healthy yet so creamy and delicious), Pumpkin Cheesecake Cupcakes, and now these, just to finish off that pumpkin cheesecake list (although some form of pumpkin cheesecake cookie or blondie is sounding seriously tasty. I'll resist though and wait until next year for that :).

This would make a delicious pumpkin pie alternative for Thanksgiving, since it gives you that pumpkin pie filling taste with individual servings and a lighter finish. The combination of pumpkin spice with the cream cheese mixture to create a fluffy and creamy pumpkin cheesecake filling is incredible.

Caramel Stuffed Chocolate Crinkle Cookies

Hello Christmas Cookie Season!! I'm obsessed with cookies so this gives me one more reason to love the holidays. I created this recipe to be a no refrigeration necessary recipe. A lot of chocolate crinkle cookie recipes require that the dough be refrigerated 2 - 4 hours before baking, I don't have time for that. Mostly I just don't have the patience for that especially when I know what awaits me.

Salted Caramel Chocolate Crinkle Cookies

I love the idea of of biting into what you think is a standard chocolate crinkle cookie, with chewy chocolate dough and sweet dusted powered sugar, only to delightfully discover a melty bomb of salted caramel hidden in the middle! It's a huge hit for a Christmas cookie exchange because it's different from the usual suspects, and always a pleasant surprise.

If you prefer you can omit the coarse sea salt from the recipe if you are not a fan of salted caramel. I personally am unequivocally in love with the addition. These taste like caramel brownies in cookie form. They are intensely delicious! If you are baking them for someone else you'll have a hard time wanting to gift them after all. If you wanted to go all out with these cookies you could even toss in some semi-sweet chocolate chips and toasted nuts.  Enjoy!

Caramel Stuffed Chocolate Crinkle Cookies

Favorite Christmas Cookie Recipes

Do you need to refresh your Christmas Cookie recipe stash? Traditions are one of the best parts of the holiday season, but if you've been making the same Christmas cookies for a decade... it's time for some new recipes. Here are a bunch of my favorite Christmas cookies!

Salted Caramel Stuffed Chocolate Crinkle Cookies

Chocolate Crinkle Cookies stuffed with a layer of decadent chewy caramel and finished with a blizzard of powdered sugar! Talk about decadent holiday cookie!

  • 1 1/2 cups all-purpose flour
  • 1/2 cup + 2 Tbsp cocoa powder
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
  • 10 tbsp salted butter (, softened)
  • 1 cup granulated sugar
  • 1/2 cup packed light-brown sugar
  • 2 large eggs
  • 1 1/2 tsp vanilla extract
  • 2 dozen caramels ((such as Kraft) or Rolos, unwrapped)
  • coarse sea salt
  • 3/4 cup powdered sugar
  1. Preheat oven to 350 degrees. In a mixing bowl whisk together flour, cocoa powder, baking powder and salt, set aside. In the bowl of an electric stand mixer fit with a paddle attachment, whip together butter, granulated sugar and light-brown sugar on medium-high speed until pale and fluffy, about 4 minutes. Add in eggs one at a time, stirring after each addition until combine. Mix in vanilla. With mixer set on low speed, slowly add in dry ingredients and mix just until combine.
  2. Scoop dough out 2 tbsp at a time and roll into a ball. Press one caramel into the center, sprinkle top of caramel with a small pinch of coarse sea salt then fold cookie dough around caramel and salt (make sure the caramel is fully covered with dough around all sides). Shape into a ball once more then roll in powdered sugar*. Align cookies on Silpat lined or buttered cookie sheets and bake in preheated oven 11 - 13 minutes. Allow to cool on cookie sheet for 5 minutes before transferring to a wire rack to cool (note that the caramel will set after it cools, I liked these cookies best warm for soft gooey caramel). Store in an airtight container.
  3. *I gave my cookies a generous coating of the powdered sugar before baking, but when they baked a lot of the powdered sugar baked and dissolved into the cookie anyway. So I found you can coat the top again with powdered sugar after baking (which is not pictured) to get a prettier cookie. If doing so roll in powdered sugar once before baking (doesn't need to be generously), then bake them and allow to cool and dip the tops of cookies in a fresh batch of powdered sugar (so there is no cross contamination) and shake off some of the excess. If you want to do it that way I would recommend using 1/2 cup powdered sugar for rolling before baking and reserve 1/4 cup in a separate bowl to dip and coat the tops after baking.

What is the best part of the holidays? Family, friends and FOOD of course! I love that I get to indulge in the deliciousness of the holidays a little early since I like to post the holiday recipes before the holidays arrive.

This time around I wanted to create a dessert recipe that would be an exciting twist on a classic. Of course, we'll always keep a classic pumpkin pie on the table for Thanksgiving and Christmas. But sometimes you just want something different. Sometimes you just want cheesecake!

I just have to say it, this cheesecake is dee-vine! Just imagine your favorite pumpkin pie meets a fluffy, rich cheesecake and then it's generously covered in salted caramel sauce and finished with sweetened whipped cream.

Yeah, almost to good to be true.

I don't know that I'm going to care much about pumpkin pie during the holidays anymore, this has definitely stolen its limelight for me. Pumpkin pie just can't compare to the salted caramel glory of this magnificent cheesecake!

Pumpkin Treats to Try

It's fall, so you know I'm doing pumpkin at every single opportunity. There are just so many fantastic ways to showcase the moist and complex flavor of pumpkin. Here are a few of my favorite easy pumpkin dessert recipes that you need to try this season:

Salted Caramel Pumpkin Cheesecake

One of the all time best fall desserts! It's like having cheesecake and pumpkin pie in one over the top dessert. This is perfectly rich, creamy, deliciously spiced, and it's sure to impress.

  • 1 3/4 cups crushed graham crackers ((from 14 sheets))
  • 1/3 cup packed light-brown sugar
  • 7 Tbsp salted butter (, melted)
  • 3 (8 oz) pkgs cream cheese, ( softened (I recommend using Philadelphia))
  • 1 cup packed light-brown sugar
  • 1/2 cup granulated sugar
  • 3 Tbsp all-purpose flour
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/2 tsp ground ginger
  • 1 1/2 cups pumpkin puree
  • 1 1/2 tsp vanilla extract
  • 2 large eggs
  • 3 large egg yolks

Topping

  • Salted caramel sauce (, recipe below or store bought)
  • Sweetened whipped cream (, for serving (optional))
  1. To prepare crust: Preheat oven to 350 degrees. In a large mixing bowl, mix together crushed graham crackers and light-brown sugar (being sure to break up any clumps of the brown sugar). 
  2. Pour in melted butter and mix until mixture is evenly coated. Firmly press mixture into the bottom and sides of a 9-inch spring-form pan coming within about 1-inch of the top edge. 
  3. Bake in preheated oven for 8-9 minutes until lightly browned. Remove from oven and allow to cool while preparing filling. Reduce oven temperature to 325 degrees.

To prepare filling

  1. In a large mixing bowl, using an electric hand mixer set on low speed, blend together cream cheese, light-brown sugar and granulated sugar until smooth, about - 30 seconds.
  2. Mix in flour, cinnamon, nutmeg and ginger. Add in pumpkin and vanilla and mix on low speed just until combined. Add in whole eggs one at a time, mixing after each addition just until combine, then add in egg yolks and mix just until combine. 
  3. Lift and tap mixing bowl against the counter several times to release air bubbles from mixture. 
  4. Pour mixture into graham cracker crust and bake in preheated oven (325 degrees) for 1 hour, then turn oven off and allow cheesecake to rest in oven 25 - 30 minutes (without opening oven door). 
  5. Remove from oven and allow to cool 15 minutes, then cover with plastic wrap and chill 5 hours. 
  6. Slice and drizzle each serving with salted caramel sauce then top with optional sweetened whipped cream. Store in refrigerator in an airtight container.
