Healthy Tuna Salad Recipe

I've been eating tuna salad for as long as I can remember. Grandma made it, Mom made it and now I'm hooked and I turn to it for lunch time and time again.

Canned tuna will forever be one of those things I just truly appreciate. It's easy to store, it's inexpensive and it is always perfect for quick recipes. It's also a great recipe for those watching their nutrition. Tuna is already protein-rich, but you could also stir in some hard-boiled eggs for a tuna egg salad packed with protein. Serve it with cheese and lettuce wraps for a low-carb option.

Of course, canned tuna is pretty bland as is but when you add some tart fresh lemon, rich and creamy mayo, and some fresh herbs it becomes something that's even fit for a fast dinner.

And who doesn't love those little bits of veggies dotted through for varied textures, flavor, and crunch? It's just simple food at its best! It's a great idea to make a batch to store in your fridge for a quick snack, lunch, or making a tuna melt.

The Best Chicken Piccata Recipe

Let's just start out by stating the obvious, everything is better with a little cream added right? My mom taught me that and it's one of the most important things she ever taught me. Truth :).

I love how simple and quick this chicken dish is to make! It's definitely fit for a weeknight meal, yet it's elegant enough for serving to guests on the weekend. And it's something everyone can agree on.

Piccata Sauce Perfection

This version isn't skimpy with the sauce, and of course you'll absolutely love the fact that it's a rich and creamy sauce vs. a plain old basic brothy sauce. The piccata sauce doesn't contain an overwhelming amount of lemon juice, and I love what the little dab of butter offers and the way it pairs with the lemon.

It's chicken piccata perfection! I can never get enough of that golden brown exterior on chicken cutlets and the rich flavor all those browned bits at the bottom of the pan add so much flavor. They really build up the flavor profile of the sauce.

This is just one of those a staple Italian recipes you'll make again and again...and again. It's how you turn bland and boring chicken into something worthy of dinner praises all around.

How to Make Greek Spaghetti

This is so easy to make! Here's all you need to do:

  • Cook spaghetti
  • Chop the fresh ingredients
  • Saute the garlic in the olive oil (to remove the harsh bite)
  • Toss it all together and tadahhhh dinners ready!

Easy Weeknight Dinner!

This is the perfect dish for busy weeknights, I really appreciated the fact that it came together so quickly. I also really appreciated the fact that it's packed with fresh tomatoes - tomatoes are one of my favorite ingredients. And I loved that the hot pasta just cooked them ever so lightly.

Garlicky Greek Spaghett

This Greek inspired spaghetti is loaded with so many fresh and flavorful ingredients! It's a breeze to throw together and it's so perfectly delicious! Plus, this is a dish that can be ready in about 20 minutes (prep your ingredients while the pasta cooks)! My kind of dinner.

  • 12 oz . dry spaghetti
  • Salt and freshly ground black pepper
  • 6 Tbsp extra-virgin olive oil
  • 1 1/2 Tbsp minced fresh garlic ((about 4 cloves))
  • 1 1/2 lbs roma tomatoes (, seeded and cut into 1/2-inch pieces)
  • 1/2 cup black olives (, sliced)
  • 1/4 cup kalamata olives (, sliced)
  • 5 oz . feta cheese (, crumbled)
  • 3 Tbsp drained capers
  • 1/4 cup finely minced fresh parsley
  • 1/4 cup fresh chopped basil ribbons
  1. Cook spaghetti in boiling salted water according to directions on package. When pasta is nearly finished heat olive oil in a small skillet or saucepan over medium-low heat. Add garlic and saute until just lightly golden, about 1 minute.
  2. Drain pasta and pour into a large serving bowl or mixing bowl. Pour olive oil and garlic mixture over pasta. Add in tomatoes, black olives, kalamata olives, feta, capers and parsley then toss to evenly coat while seasoning with salt and pepper to taste. Toss in basil and serve.
