Peppermint Christmas Cookies

We all love that chocolate peppermint combo, but have you tried the white chocolate peppermint combo? These cookies are just that, more of a vanilla meets peppermint cookie and they are completely irresistible in every way!

They are easy to make, similar to a chocolate chip cookie but with the addition of crushing candy canes. And those crushed candy bits add a pretty speckles of red color to these bright and cheery cookies.

You'll find they stay soft for days, thanks to those melted candy cane bits and a fair amount of butter.

They pair beautifully with a cup of chocolatey hot cocoa or deeply flavored coffee. I think they will be a standout addition on a holiday cookie tray and may even become a new tradition on repeat each year.

White Chocolate Dipped Peppermint Chocolate Cookies

Chocolate Cookies with Festive Peppermint Flavor

After 3 batches of these I finally found the perfect ratio of ingredients with a rich chocolate flavor, just enough peppermint, and a deliciously chewy texture.

I started out with a recipe that I found on Food Network then changed it until they were perfect for my taste. I reduced the butter by 1/4 cup because several people were saying in the comments that their cookies just spread into one - which is likely due to a bit too much butter.

White Chocolate Dipped Peppermint Chocolate Cookies

With the first batch I used Dutch processed cocoa like the recipe calls for but my cookies came out super thin so I switched to regular cocoa powder.

I also found that 3/4 cup cocoa wasn't enough chocolate flavor so I upped it by 1/4 cup then cut back on the flour.

Now they've got well pronounced chocolate flavor which pairs well with the white chocolate coating. Here I also replaced some of the granulated sugar with brown for a chewier cookie.

And last but not least I wanted a white chocolate dipped peppermint cookie so I replaced 1 tsp of the vanilla with peppermint extract, and finished them off with a generous dose of white chocolate (think cookies and cream), then sprinkled them with some pretty peppermint bits.

These are Christmas + chocolate perfection! Another must-try cookie to add to the holiday baking list!

Perfect for the Holidays!

I love making a variety of cookies during the holidays and there always need to be a chocolate cookie of some kind right?

I've had hot chocolate cookies on my to-do list for probably the last 4 years and I've finally gotten around to trying them.

But I decided to add a peppermint twist to them because I love the chocolate and peppermint combination.Melted chocolate in a glass mixing bowl for hot chocolate cookies.

A Rich Chocolate Flavor

I love that the base for these cookies is packed with chocolate. Not just cocoa but a lot of chopped chocolate.

It gives them a rich flavor and a chewy, fudgy texture. They're almost like a brownie cookie.

Like Mississippi Mud Cake in Cookie Form

One thing these cookies really remind me of is Mississippi Mud Cake. It's that chocolate base, marshmallow and chocolate icing combination.

I think I'd also love these cookies drizzled with chocolate in place of the icing.

Don't get me wrong the icing is delicious but next time I might try chocolate. The more chocolate the better, right?

Peppermint Hot Chocolate Cookies

These cookies are the perfect festive holiday treat! Not to mention they're a chocolate lovers dream! Soft, chewy chocolate cookies are layered with a sweet vanilla marshmallow, chocolate icing, and crushed peppermint candies. Who could resist?

Cookies

  • 12 oz. semi-sweet baking chocolate, (broken into pieces or chopped)
  • 1/2 cup (113g) unsalted butter, (diced into 1 Tbsp pieces)
  • 1 1/2 cups (213g) all-purpose flour
  • 1/4 cup (21g) unsweetened cocoa powder
  • 1 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 1/4 cups (280g) packed light brown sugar
  • 3 large eggs
  • 1 tsp peppermint extract
  • 1 tsp vanilla extract
  • 24 large marshmallows

Icing

  • 2 cups powdered sugar
  • 1/4 cup (21g) cocoa powder
  • 4 Tbsp (56g) unsalted butter, (diced into small pieces)
  • 1/4 cup half and half
  • 1/4 tsp peppermint extract
  1. For the cookies: Add chocolate and butter to a medium microwave safe mixing bowl. Heat in microwave in 30 second intervals, stirring well between intervals until melted and smooth, set aside to cool slightly. 

  2. Meanwhile add flour to a medium mixing bowl, sift in cocoa powder and add baking powder and salt. Whisk mixture to combine. Set aside.
  3. In the bowl of an electric stand mixer fitted with the paddle attachment blend together brown sugar, eggs, peppermint extract and vanilla. Mix in chocolate mixture.
  4. With mixer set on low speed slowly add in flour mixture and mix just until combined. 

  5. Cover bowl and chill 1 hour or until firm enough to handle (I actually divided the dough into two containers and it chills faster). Preheat oven to 325 degrees during last 15 minutes of chilling.
  6. Scoop dough out about 1 lightly heaping tablespoon at a time. Shape into a ball then transfer to a baking sheet lined with parchment paper or a silicone baking mat, spacing cookies 2-inches apart (keep remaining dough chilled). 
  7. Bake in preheated oven until slightly under-baked, about 9 minutes. Meanwhile cut marshmallows into halves using kitchen scissors. 
  8. Remove cookies from oven and add 1 marshmallow half to each cookie placing the cut side downward. Return to oven and bake about 2 - 3 minutes longer until marshmallows have begun to melt. 
  9. Remove from oven and gently press down on marshmallows to flatten slightly. Cool on pan several minutes then transfer to cookies to wire racks and set wire racks over a baking sheets.

  10. For the icing: Sift powdered sugar and cocoa into a medium mixing bowl, set aside. 

  11. Heat butter and cream over medium heat and cook, stirring frequently until butter has melted and mixture reaches a simmer. Remove from heat, pour in powdered sugar and cocoa powder and whisk until smooth.

  12. Mix in peppermint extract. If mixture is too thick thin it with a little hot water, if it's too thin thicken with a little more sifted powdered sugar. 

  13. Immediately spoon icing over cookies (or alternately drizzle from a resealable bag with a cut corner) and sprinkle each cookie with crushed peppermint after adding icing because the icing will start to set quickly.

Peppermint Meltaway Cookies

Delicious melt-in-your-mouth frosted peppermint cookies! Deliciously sweet and perfect for the holidays!

Cookies

  • 1 1/4 cups (178g) all-purpose flour
  • 1/2 cup (68g) cornstarch
  • 1/4 tsp salt
  • 1 cup (226g) unsalted butter, (softened)
  • 1/2 cup (68g) powdered sugar
  • 1/2 tsp peppermint extract

Frosting

  • 2 Tbsp (28g) salted butter, (softened)
  • 2 Tbsp half and half
  • 1/4 tsp peppermint extract
  • 1 1/2 cups (200g) powdered sugar
  • 1/4 cup (42g) finely crushed peppermint bits or candy canes
  1. In a mixing bowl whisk together flour, cornstarch and salt, set aside.
  2. In the bowl of an electric stand mixer cream fitted with the paddle attachment cream together butter and powdered sugar until combined.
  3.  Mix in peppermint extract then with mixer set on low speed slowly add in flour mixture and mix just until combined. 
  4. Cover bowl with plastic wrap and chill until nearly firm, about 1 hour, while preheating oven to 350 degrees during last 15 minutes of chilling.

  5. Scoop dough out 1 even tablespoon at a time, shape into a ball then transfer to an ungreased 18 by 13-inch baking sheet, spacing cookies 2-inches apart (keep dough that's wont be baking chilled). 
  6. Bake in preheated oven until cookies are set and bottoms are lightly golden brown, about 10 - 13 minutes. Let cool on baking sheet several minutes then transfer to a wire rack to cool completely.
  7. In the bowl of an electric stand mixer cream together butter, half and half, peppermint extract and powdered sugar until light and fluffy*. 

  8. Working with one cookie at a time spread frosting over cookie and immediately after frosting each cookie add crushed peppermint bits before frosting starts to set, repeat process with all cookies. 
  9. Store cookies an in airtight container at room temperature.
  • *If frosting is too thick add a little more half and half, if it's too thin add a little more powdered sugar.

The Perfect Christmas Cheesecake!

Nothing welcomes a celebration the way an over-the-top cheesecake does! Am I right or am I right? Cheesecake is one of my favorite kinds of cake.

It's always a dessert that you want to savor each and every little spec of it and not a crumb goes wasted. I mean I wouldn't complain if a generous slice of it found its way to my dinner table every night - er, until my waistline started disagreeing with that I suppose.

But that is why these are perfect for the holidays, yes they are indulgent but in moderation, they are worth every calorie!

That's right, two peppermint-frosted cookies in two days! I just posted these Peppermint Sugar Cookies yesterday and it got me thinking of other peppermint cookies I'd like to make this season. Three years ago I posted a very similar recipe to these but that started with a box mix, these Peppermint Brownie Cookies however are made entirely from scratch ingredients!

Frosted Peppermint Brownie Cookies | Cooking Classy

These cookies are so soft and moist. I love how they are perfectly fudgy along with just the right intensity of chocolate flavor (so as not to overpower the peppermint flavor and the cream cheese frosting). Using a box brownie mix will work, but this is definitely a noticeable upgrade. Plus, I didn't want a cookie so rich you could only take a few bites. The overall contrast between the textures of this cookie is simply dreamy! I love the creamy frosting atop the chewy cookie and the slight crunch from the tiny peppermint pieces.

Frosted Peppermint Brownie Cookies

The trick to these brownie cookies? Real melted chocolate. You can get good chocolate flavor with cocoa powder (especially a dutch-processed cocoa powder), but I've found that using melted chocolate keeps the cookie dough incredibly moist, almost like brownie batter. After you melt and cool the chocolate, you use the whisk attachment for the bowl of a stand mixer to whip the chocolate into the butter and dark brown sugar mixture. Meanwhile, mix the dry ingredients in a large bowl and fold it into the chocolate mixture when ready. The consistency should be thick enough to use a cookie scoop, but soft enough to be smoothed with a rolling pin. Don't overbake—trust me!

Peppermint Frosting Sugar Cookies

Like fresh berries in the summer, pumpkin in the fall, carrot cake everything in the spring, and peppermint and eggnog during the winter. Another thing I look forward to during this time of year is the snow, call me crazy but I love it!

After it snows and the sun comes out and glistens across the horizon, I just love the way the snow shines and sparkles and that blanket of white that covers everything is truly gorgeous.
