Two years ago I shared a post packed with unique and creative s'mores ideas. Tasty, decadent s'mores that go beyond the three-ingredient original s'more. I didn't photograph very many of them so today I wanted to share those ideas again and show you what they'd look like, and remind you that you need to make them!

I don't think there's a bigger s'mores lover out there than me, guys I win (okay just kidding, but gimme top 10 at least). I've been making them since I was probably 4, back then with the help of my mom.

Early on I paid close attention to how to make the perfect s'more over the hot coals of a fire (big flames never work nearly as good), rotating the marshmallow at just the right time to get that perfectly golden brown exterior.

Now half the time I just make them over my stove top burner (or over a grill or in the oven with a broiler!) because I want to enjoy s'mores all year long, half the time in the summer I don't want to build a fire just for a s'more. In my opinion, the indoor ones taste basically the same, especially if you can toast them just right. It's more about the fun of making them over a fire really. Although, I do love to bake them in my house because I love that sweet aroma of toasted marshmallows filling the air.

The possibilities with s'mores are endless. Of course, the original classic S'mores are always amazing and I can never stop at just one, but if you want to try some of the best S'mores of your life and if you want to impress then explore these new flavors! And try all of them, but trust me you'll have a hard time picking a favorite.

With these, I made chocolate cupcakes and topped them with a buttercream frosting. Basically you can use any cupcake recipe you want, but I would highly recommend using the recipe for vanilla buttercream frosting below because it is basically the best food ever (to say the least :))!

The recipe I have listed below for chocolate cupcakes is deliciously chocolatey and completely irresistible. They are slightly dense, so if you want a fluffy chocolate cupcake you can use this recipe here (just omit the Reese's stuffed center).

Other good cupcake choices would be red velvet, white, yellow, carrot, and coconut. Okay, nearly any cupcake flavor goes with vanilla frosting, so you get the idea.

Who knows why I haven't made these before, but it's probably a dangerous thing now that I have. Sometimes things this good might be better off unknown :). A chewy, caramel, nougat, and peanut-studded cookie dough that is loaded with chocolate has got to be good right? Indeed it does. These are amazing - so get going and make a batch asap. Enjoy!

Peppermint Red Velvet Cookies

So when was it that peppermint became associated with the color red? Especially considering it comes from green leaves. Not sure who came up with the color choice but for some reason it's as if it were meant to be.

If you ask me, the flavors of peppermint should most definitely be associated with the color red. They are vibrant, warm and bold just like the color red, and the obvious answer - the peppermint flavor always reminds me of the Christmas season. This got me thinking that their should be a peppermint red velvet dessert.

I saw these cookies on Pinterest (yes another Pinterest find, I'm an addict) and decided to make them in a peppermint version with a slightly more vibrant red for the holidays.

I simply reduced the cocoa powdered (and replaced the cocoa powder reduction with flour, hence the + 2 tbsp flour) and replaced the brown sugar with granulated sugar to reduce the brown hues in the cookie and I actually used 1 less tsp of the red food coloring because I didn't think it needed a full tbsp.

I also didn't think the cookies needed a full 12 minutes of baking, my first batch was so dry after baking for 12 minutes so the second I cut clear back to 8 and they were perfect. Moist and chewy on the inside and lightly crisp on the outside. Enjoy!

Christmas Cookie Recipes to Try

Do you go to Christmas cookie swaps? Exchange holiday treats with neighbors? Attend a lot of festive gatherings during December? I've got you. Here are a handful of my favorite Christmas cookies for you to try:

Peppermint Red Velvet Cookies with Peppermint Kisses

A perfect holiday treat with it's beautiful red color and festive peppermint flavor.

  • 36 Hersheys Peppermint Kisses (, Hugs or Milk Chocolate Kisses, frozen*)
  • 1 1/2 cups + 2 Tbsp all-purpose flour
  • 2 Tbsp unsweetened cocoa powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup vegetable oil
  • 1 cup granulated sugar
  • 1 large egg
  • 2 tsp red food coloring
  • 1 tsp white vinegar
  • 1 tsp vanilla extract
  • 3/4 tsp peppermint extract
  1. Preheat oven to 375 degrees. In a mixing bowl, whisk together flour, cocoa powder, baking soda and salt, set aside.
  2. In the bowl of an electric stand mixer fitted with the paddle attachment, blend together vegetable oil and sugar on medium speed until mixture is creamy, about 3 minutes. Mix in egg. Add in food coloring, vinegar, vanilla extract and peppermint extract and mix until well blended.
  3.  With mixer set on low speed, slowly add in dry ingredients and mix just until combine. Roll dough into balls about 1 scant Tbsp each and place on Silpat or parchment paper lined baking sheets. Bake in preheated oven about 8 - 9 minutes. 
  4. Remove from oven and allow to cool 30 seconds then lightly press 1 chocolate Kiss onto each cookie and immediately transfer cookies to a wire rack to cool. 
  5. Allow Kisses on cookies to set at room temperature (or transfer to an airtight container and refrigerate until chocolate has set then return to room temperature before enjoying or enjoy warm out of the oven and slightly melted). Store cookies in an airtight container at room temperature.
  6. *Place in freezer for at least 30 minutes and don't remove from freezer until removing cookies from oven. If using Hugs or Milk Chocolate Kisses I would recommend increasing peppermint extract to a full 1 tsp.

I love Scotcheroos but I'd have to say I like these even more. These incredible easy to make treats are chewy, crunchy, deliciously sweet, perfectly peanut buttery along with just the right ratio of chocolate (to mimic the flavor of the Reese's) and then they are finished of with the crowning jewels, the melt in your mouth Reese's Peanut Butter Cups.

Peanut Butter & Chocolate Recipes to Try

Can't get enough of the peanut butter and chocolate combo? Me neither. It's so hard to resist and impossible to stop once I have a Reese's-inspired treat in front of me! Here are a few more that you might love:

Reese’s Krispie Treats

Rich, easy to make, peanut buttery, crisp treats that are sure to leave everyone craving more!

  • 1 cup light corn syrup
  • 1 cup granulated sugar
  • 1/4 tsp salt
  • 1 cup peanut butter
  • 1/2 cup semi-sweet chocolate chips
  • 1 tsp vanilla extract
  • 4 1/2 cups Rice Krispies Cereal
  • 6 regular size Reese's Peanut Butter Cups (, each diced into 8 pie shaped wedges)
  1. In a medium saucepan, combine corn syrup, sugar and salt and bring mixture just to a boil over medium heat, whisking constantly (to dissolve sugar). Once mixture reaches a boil, reduce heat slightly and allow to gently boil for 1 minute. Remove from heat, add in peanut butter, chocolate chips and vanilla, stir mixture until chocolate chips have completely melted. 
  2. Pour in Rice Krispies Cereal and toss mixture to evenly coat. Pour mixture into a buttered 8x8 (or 9x9) baking dish and gently spread and press into an even layer. 
  3. Allow to cool until just warm to the touch then evenly distribute diced Reese's Peanut Butter Cups over top and lightly press them onto the coated cereal. Enjoy warm, with ooey gooey melted chocolate topping (my favorite, I love melted candy bars though =) or cover and refrigerate until chocolate has set, then remove from refrigerator and rest about 10 minutes at room temperature and cut into squares. Store in an airtight container.

I mentioned a while back how I've become obsessed with cookie dough, well it was no lie. That love led me to create these. I've seen Rolo Stuffed Snickerdoodle Cookies in the past but why not just make them as cookie dough bites without baking?

With these you get less mess, less waiting yet still one indulgent, chewy (thanks to that yummo Rolo) cookie dough bite. Simply said, they're Fantastic! They're perfect for small hands or to take to an event, because they're easy to grab-and-go.

Rolo Stuffed Edible Cookie Dough

The Rolos add such depth to the sweetness of Snickerdoodles, with rich chocolate and chewy caramel. They pair perfectly with cinnamon sugar—trust me.

Note, if you don't want to indulge as much these bites are also delicious without Rolos stuffed in them. So if you are wanting to make them right away but don't have Rolos on hand I'd say just try them next time with the Rolos. Or you can try adding other treats in the middle—chocolate chips, dollops of Nutella, M&Ms, peanut butter cups, Whoppers, or anything else you love! Enjoy!

I can't get enough of cookie dough—and my kids love it. While I still sneak real cookie dough, making a safer version of edible cookie dough is a must for how much we love it. Here are a few new ways for you to crush that cookie dough craving!

Rolo Stuffed Snickerdoodle Cookie Dough Bites

Snickerdoodle cookie dough stuffed with a chocolate covered caramel Rolo and rolled into perfect bite size dough balls

  • 1 1/2 cups all-purpose flour, (heat treated)
  • 1 tsp cinnamon
  • 1/8 tsp nutmeg
  • 1/4 tsp salt
  • 1/2 cup salted butter (, softened)
  • 2/3 cup packed light brown sugar
  • 1/4 cup granulated sugar
  • 1/4 tsp cream of tartar ((optional))
  • 3 Tbsp heavy cream
  • 1 1/2 tsp vanilla extract
  • 28 Rolo candies
  • 3 Tbsp granulated sugar
  • 3/4 tsp cinnamon
  1. In a mixing bowl, whisk together flour, 1 tsp cinnamon, nutmeg and salt, set aside. In the bowl of an electric mixer, whip together butter, brown sugar, 1/4 cup granulated sugar and cream of tartar until pale and fluffy, about 4 minutes. 
  2. Stir in heavy cream and vanilla extract. Add dry ingredients and mix until combine. In a separate small mixing bowl, whisk together 3 Tbsp granulated sugar and 3/4 tsp cinnamon. 
  3. Scoop dough out 1 (even) TBSP at a time, then press one Rolo candy into the center of scooped dough and roll into a ball. Roll each dough ball into cinnamon sugar mixture. Chill or serve immediately. Store Cookie Dough Bites in refrigerator.
