After you try this Mexican spin on grain bowls you can try building your own grain bowl from scratch. Wondering how to build a grain bowl? Simply include a base layer of grains, add fresh and/or roasted vegetables, a protein (such as legumes, meat, tofu, eggs) or cheese, fresh greens, and finish with a dressing or sauce of choice.

They make such a filling dinner and are an excellent option for make ahead meal prep for lunch too.

Possible Variations

To build these bowls include the grain and black beans, from there you can add your own substitutions:

  • Protein: These can also be made with chicken thighs or chicken breasts in place of the sweet potatoes, I've included instructions in the note of the recipe.
  • Cheese: You can add cheese such as feta, cheddar or queso fresco.
  • Sauces: They are also delicious with a heaping spoonful of salsa, pico de gallo or a finishing drizzle of Mexican hot sauce.  If you want more creaminess try serving them with a dollop of sour cream or Greek yogurt.
  • Veggies: You can subsistute some of the vegetables here for others you may have on hand, that's the beauty of a grain bowl. Poblano pepper, zucchini, winter squash, or tomatoes are a great fit.
  • Grains: These could also be made with farro or barley. Or you can use all brown rice or all quinoa rather than a blend.

One Pan dinners are some of my favorites. They are a breeze to prepare, and clean up is what we wish every dinner to be like, and when everything cooks in one pan all those flavors come together so perfectly - each ingredient seasoning the next.

Another favorite thing - Chicken Fajitas. So far I've got Sheet Pan Chicken Fajitas, Slow Cooker Chicken Fajitas, Chicken Fajita Kebabs, and Chicken Fajita Soup so why not add another into that rotation?

This simple one-pan rice bowl does not disappoint! It's made with tender brown rice, lean protein-rich chicken, crave-able Mexican spices and fresh cilantro, mildly sweet bell pepper, smokey fire-roasted tomatoes, creamy black beans, and melty cheese (because who can resist a little finishing touch of cheese even if it's not traditional to fajitas? Perfect upgrade).

It's likely to become one of those dinners even the kids will request!

An Easy Healthy Rice Recipe!

This has been one of my favorite sides to make this summer. It will remind you of a Cowboy Caviar (Texas Caviar) Dip but instead of serving as a chip dip it's a refreshing side dish.

I love to serve it with grilled chicken or pan seared salmon, and it would also be delicious with shrimp. Honestly though it's so filling that you could just serve up a bowlful of this for lunch or dinner and no one would be complaining.

We all get caught in the slump of "what am I going to make to go with it"? This seems like a good all-purpose place to go, no more boring plain rice!

And it's made with simple ingredients yet it's brimming with flavor! Fresh ingredients make the best recipes!

It's just one of those recipes that you can feel great about eating, possibly even giving you a little pep in your step instead of feeling weigh down after dinner. This is fuel you through the day food.

Mexican Chicken and Vegetable Recipe in One!

I know I'm totally smitten! My husband and I fell in love at first bite. The blend of flavors here is just spot on delicious. And not only that this is a perfectly nutritious dinner that I feel great about feeding my family.

We eat chicken most nights for dinner so I'm always trying to come up with new recipes so we don't get bored. This one though is definitely going on repeat. It's a recipe I could never get tired of.

I mean how could you go wrong here? Chicken along with delicious melody of veggies is seasoned with Mexican spices. Then it's sautéed and tossed with sweet honey, tart lime and plenty of fresh cilantro.

This colorful blend of sweet potatoes, avocados, corn, tomatoes, and red onion makes me enjoy this chicken dinner just that much more (don't hesitate to sprinkle on a few more red onions at the end too)!

If there's a food out there that includes peanut sauce I already know I love it. So before I had even made these Chicken, Veggie and Brown Rice Bowls with Peanut Sauce I was already in love but once I tasted them I was totally smitten!

They have a few steps but they are a breeze to make (hello rotisserie chicken), so these are perfect for lunch or dinner.

These are also perfect for meal prep if you are into that, I had one bowl then saved the rest for my husband for lunches and he couldn't be happier.

Chicken Veggie Brown Rice Bowls with Peanut Sauce

Ingredients You'll Need for This Recipe

  • Brown rice
  • Rotisserie chicken
  • Veggies - sweet potatoes, bell pepper
  • Olive oil
  • Spices - cumin, coriander, cinnamon, S&P
  • Cilantro
  • Peanuts

For the Peanut Sauce

  • Creamy peanut butter
  • Honey
  • Lime
  • Soy sauce
  • Fresh garlic and ginger
  • Sriracha

Use Instant Rice or Quinoa for a Quicker Option

The only slow part of this recipe is that 50 minute brown rice cook time. Feel free to use leftover brown rice or substitute instant brown rice or quinoa for a quicker option, then you should be able to have this meal ready in about 30 minutes.

Can I Use Cooked Chicken Breasts or Thighs?

To keep this meal simple I decided to go with rotisserie chicken. You can cook your own chicken, preferably bone-in breasts for more flavor or chicken thighs. Or grilled chicken breasts would be another great option.

How to Make Chicken Bowls

  • Cook rice according package instructions.
  • Preheat oven an grease baking sheet.
  • Toss potatoes with oil and spices on baking sheet.
  • Place potatoes in a mound on baking sheet, drizzle with olive oil and toss, spread even.
  • Roast until tender, tossing once halfway.
  • Mix all peanut sauce ingredients in a bowl.
  • In serving bowls layer rice, chicken sweet potatoes, bell pepper, cilantro and peanut sauce

I don't recommend skimping out on any of the veggie and topping ingredients, each one really does just adds a delicious flavor and texture and each ingredient together is what really makes these bowls sing!

Bowls

  • 1 cup brown rice
  • 2 cups shredded rotisserie chicken breast
  • 2 medium ((22 oz) sweet potatoes, peeled and diced into small cubes)

  • 1/2 tsp ground coriander
  • 1/4 tsp ground cinnamon

  • 1/3 cup peanuts (, chopped)

Peanut Sauce

  • 1/3 cup creamy peanut butter

  • 1 Tbsp fresh lime juice
  • 1 Tbsp soy sauce
  • 1 tsp minced garlic
  • 2 tsp peeled and minced fresh ginger
  • 1 tsp sriracha (, or more to taste)
  • 3 Tbsp water
  1. Cook rice in salted boiling water according to directions on package.
  2. Meanwhile, preheat oven to 425 degrees. Spray a rimmed 18 by 13-inch baking sheet with non-stick cooking spray (I like to use a dark baking sheet, if you have one. It helps brown the potatoes better). Place potatoes in a mound on baking sheet, drizzle with olive oil and toss. Sprinkle evenly with cumin, coriander, cinnamon, salt and pepper and toss to evenly coat. Spread into an even layer. Roast in preheated oven until tender, about 20 minutes, tossing once halfway through. Meanwhile, prepare peanut sauce as listed below.
  3. Layer rice among 4 serving bowls. Top with chicken, sweet potatoes, bell pepper and cilantro. Drizzle over peanut sauce and sprinkle with peanuts. Serve warm.
  4. For the peanut sauce:
  5. Whisk together all ingredients. Heat in microwave just before serving for 20 - 30 seconds to warm and for a runnier consistency if desired.

Tips for This Recipe

  • Of course I think this is better with cheese, everything is better with cheese. But if you are looking to cut calories feel free to omit it.
  • Add corn for another veggie.
  • If you don't like heat just leave out the cayenne pepper, and if you love heat add in some extra.
  • If you don't have parsley on hand but you do have cilantro I think that would be another good herb here and again don't hesitate to add more to taste if you'd like.

That's the great thing about home cooking, you can make it exactly how you like. Just don't sway too far from the recipe here though because I thought it was spot on delicious :). It's like Spanish rice meets sausage and zucchini and it's a seriously tasty combo!

Sausage Zucchini and Brown Rice Skillet (One Pan)

This is such an easy, flavorful one pan meal you'll want on repeat! It includes a whole grain, lots of veggies, and lean protein so you just can't go wrong here. The perfect busy day recipe!

  • 1 1/2 Tbsp olive oil
  • 3/4 cup finely chopped yellow onion
  • 2 cups halved and sliced zucchini
  • 1 cup chopped green bell pepper
  • 2 cloves garlic (, minced)
  • 8 oz . smoked turkey sausage (, sliced)
  • 1 1/2 cups instant brown rice ((such as Minute brown rice))
  • 1 (14.5 oz) can diced tomatoes
  • 1 1/2 cups low-sodium chicken broth
  • 1 tsp chili powder
  • 1/2 tsp ground cumin
  • 1/2 tsp dried thyme
  • 1/8 tsp tsp cayenne pepper ((optional))
  • Salt and freshly ground black pepper
  • 1 (14.5 oz) can black beans, drained and rinsed
  • 1 Tbsp chopped fresh parsley
  • 3/4 cup shredded cheddar or Mexican blend cheese ((optional))
  1. Heat olive oil in a 12-inch non-stick skillet (that's at least 2-inches deep) over medium-high heat. Add in yellow onion and saute, stirring frequently, 4 minutes. Add in zucchini, bell pepper and garlic and saute 2 minutes longer. Push veggies to one side (and preferably pull that side of the pan off the burner heat slightly while cooking the sausage) then add sausage to the now empty side and cook until it's starting to brown, turning occasionally, about 3 minutes.
  2. Pour in rice, tomatoes and chicken broth. Season with chili powder, cumin, thyme, cayenne pepper and salt and pepper to taste. Stir then pour in black beans, bring mixture to a boil. Cover pan with lid and reduce temperature to medium. Allow to boil gently 5 - 6 minutes then remove from heat, toss and let rest 8 - 10 minutes until rice is tender. Drain off excess liquid if desired. Toss in parsley and serve warm with cheese.

Grilled Teriyaki Chicken Bowls

Here is a recipe I've been meaning to share for probably the last three years. It's much like an entree I order at a local restaurant (Rumbi, for anyone from Utah or Idaho), and I love being able to make it at home.

I also love that this recipe doesn't require any marinating and therefore it comes together pretty quickly, especially if you happen to have leftover rice. Another great thing is that you'll likely have some left over teriyaki sauce from this recipe to use for grilled chicken, salmon or beef the next day.

Whether it be a rice bowl, a noodle bowl, a loaded salad bowl, a big bowl full of pasta, a breakfast bowl (is that a thing? It should be!), entree bowls are always just good comfort food and you can always count on them to be loaded with goodness!

I recently read in article in the New York Times about how bowls are becoming much more commonplace at dinner, and it just makes sense. They can pack a lot in, they can be used for just about anything, they're more couch-friendly than a plate, and many foods often look better in a bowl then they do piled on a plate.

I know I need to order more big bowls because I love the idea of dinner in a bowl, like this teriyaki chicken bowl recipe. So grab yourself some big bowls and fill them up with these perfectly delicious grilled chicken teriyaki bowls!

Teriyaki Bowl Ingredients

For the homemade teriyaki sauce, you'll need:

  • Low-sodium soy sauce
  • Water
  • Light brown sugar
  • Honey
  • Garlic
  • Ginger
  • Rice vinegar
  • Cornstarch

And for the teriyaki chicken bowls, you'll need:

  • Olive oil
  • Chicken breasts
  • Pepper
  • Zucchini
  • Matchstick carrots
  • Broccoli
  • Rice, for serving
  • Sesame seeds, optional

How to Make Grilled Teriyaki Chicken Bowls

  • Whisk together teriyaki sauce ingredients in small saucepan and cook until thickened slightly.
  • Grill chicken until cooked through, then cube.
  • Sauté zucchini, carrots, and broccoli in an oiled skillet until crisp-tender.
  • Assemble bowls — add rice to bottom of bowl, follow by veggies and grilled chicken pieces. Drizzle with homemade teriyaki and garnish with sesame seeds.

Can I Make This With Frozen Vegetables?

Yes, you can use frozen vegetables instead of fresh for this recipe. Just make sure to cook the veggies before adding them to your teriyaki bowl.

Can I Bake the Chicken Instead of Grilling?

Yes, if you don't have a grill you're welcome to bake the chicken. You can even use leftover chicken in this recipe, or rotisserie chicken!

Tips for the Best Teriyaki Chicken Bowls

  • You don't need additional salt in this recipe as the homemade teriyaki is plenty salty.
  • Feel free to use different veggies than this recipe calls for. Snap peas and bell peppers would pair nicely with the teriyaki!
  • If you have leftovers, store the teriyaki sauce separately from the chicken and veggies.

Teriyaki Grilled Chicken and Veggie Rice Bowls

A flavor packed veggie rice bowl with teriyaki chicken.

Teriyaki sauce

  • 1/2 cup low-sodium soy sauce
  • 1/2 cup water
  • 3 Tbsp packed light-brown sugar
  • 3 Tbsp honey
  • 3 cloves garlic (, minced (1 Tbsp))
  • 1 Tbsp minced ginger
  • 1 Tbsp rice vinegar
  • 1 1/2 Tbsp cornstarch

Chicken, veggies and rice

  • 3 1/2 Tbsp olive oil (, divided, plus more for brushing grill)
  • 1 1/2 lbs bonless skinless chicken breasts
  • Ground black pepper
  • 1 medium zucchini (, diced into half moons and quartered (1 1/2 cups))
  • 1 1/2 cups matchstick carrots
  • 2 1/2 cups small diced broccoli florets
  • 1 1/2 - 2 cups white or brown rice (, cooked according to directions on package (I prefer short grain brown rice))
  • Sesame seeds (, optional)

For the teriyaki sauce:

  1. In a small saucepan whisk together low-sodium soy sauce, 1/4 cup + 2 Tbsp of the water, the brown sugar, honey, garlic, ginger and rice vinegar. Bring mixture to a light boil over medium-high heat. 
  2. Whisk together cornstarch with remaining 2 Tbsp water, then add to sauce mixture in saucepan. Reduce heat slightly and allow to boil 1 minute, stirring constantly. Remove from heat, set aside.

For the chicken:

  1. Brush both sides of chicken with 1 1/2 Tbsp of the olive oil and season pepper (you won't need salt since the teriyaki sauce is plenty salty). Preheat a grill over medium-high heat (to about 425 - 450°F/220-230°C). 

  2. Brush grill grates lightly with oil then grill chicken until center registers 160 - 165°F/ 70-73°C degrees on an instant read thermometer, about 4 minutes per side. Remove and let rest 5 minutes then dice into cubes.

For the veggies:

  1. Heat remaining 2 Tbsp olive oil in a saute pan over medium-high heat. Add zucchini, broccoli and carrots and saute 4 - 5 minutes until crisp tender.

To assemble bowls:

  1. Layer rice into 4 bowls then top each with 1/4 of the chicken and 1/4 of the veggies. Drizzle desired amount of teriyaki sauce over tops (you'll have extra left over - use it for chicken or salmon the next day), sprinkle with sesame seeds. Serve warm.
