About This Crockpot BBQ Chicken Recipe

Sweet, savory, salty, smokey, tangy and with great depth of flavor. Here you get all the things you are looking for in homestyle BBQ pulled chicken and then some.

But no need to break out the grill or smoker. Here the crockpot does most of the work!

At the end you just shred (or in other words "pull") the chicken into pieces and pile over (optionally) buttered and toasted hamburger buns. And if you want to make it extra delicious mound on the easiest coleslaw as well (with blue cheese if you'd like!).

To finish, pair it with a side of buttered corn (on the cob is best!), crisp potato chips, and sweet apple slices or fruit salad for a super easy summer inspired meal!

Slow Cooker Pulled Pork Recipe

So what makes this my favorite pulled pork recipe?

  • A simple homemade dry rub (the seasoning mixture that's rubbed over the roast).
  • A slightly sweet, tangy, smokey broth mixture the roast soaks and cooks in for 8 hours.
  • I love that since it's cooked in the slow cooker it's super tender.
  • And I also like the shortcut of a store-bought bbq sauce here, making it doable for busy days (but feel free to use homemade if you got some on hand).

Then for me it's not complete without a side of coleslaw. The two just go hand in hand right?

My coleslaw of choice for pulled pork sandwiches is this simple recipe HERE, but I do like to add blue cheese crumbles when pairing it with pulled pork. It takes it over the top.

Hawaiian BBQ Chicken Pizza

I've got pizza on my mind lately. Oh wait, I always have pizza on my mind. It's been one of my favorites foods as long as I can remember, and I have the feeling that is never going to change.

Pizza is just comfort food at it's best, and when done right it's sure to please. I love how creative you can be with homemade pizza!

Pizza topping options are endless, and you don't need to just stop at Italian or American flavors. A few I still need to try are Thai pizza, enchilada pizza, and a potato rosemary pizza (and that list goes on and on).

Today, I went with the classic BBQ chicken pizza, but gave it a Hawaiian spin. This Hawaiian pizza will be very familiar to you if you've ever ordered something similar at California Pizza Kitchen.

To be honest, I've never ordered there (I think I've only been there once or twice my whole life), I just used their idea for inspiration. Their chicken pizza uses Gouda cheese, which would also be delicious if you wanted to use half mozzarella and half Gouda for this recipe.

I also added bacon would taste great, because really can you go wrong with bacon? Plus, I thought this BBQ chicken pizza needed that saltiness to balance out the sweetness from the pineapple.

And you can use homemade or store bought bbq sauce for this recipe. My favorite store-bought sauce is Bulls Eye Original). It has a good depth of flavor, so when I don't have an hour to wait for a bbq sauce to simmer, I usually go with that one.

You will love this homemade pizza recipe! I know I will be making it time and time again, and doesn't it have summer written all over it? I'm sure this will be one of my go-to pizzas this summer, and I'm sure I'll even be grilling it!

Hawaiian BBQ Chicken Pizza Ingredients

  • Pizza dough
  • Chicken breasts
  • Olive oil
  • Barbecue sauce
  • Bacon
  • Mozzarella

How to Make Homemade Pizza

  • Preheat oven to 475 degrees F, and preheat grill to medium-high heat.
  • Brush chicken with olive oil and season with salt and pepper. Grill until cooked through, brushing with bbq sauce during the last few minutes.
  • Whisk together remaining olive oil and garlic. Brush pizza dough with the mixture and let rest 10 minutes.
  • Cut chicken into cubes. Brush pizza dough with remaining bbq sauce, then add the toppings.
  • Bake in preheated oven until crust is golden brown, 11 - 13 minutes.

Can I Use Canned Pineapple on This BBQ Chicken Pizza?

Yes, but you should drain off as much excess liquid as possible and pat the pineapple dry with paper towels first.

Can I Use Pre-Made Chicken for This Recipe?

Of course! If you have leftover chicken or a rotisserie chicken, you can use that instead of grilled chicken.

Tips for the Best Chicken Pizza

  • If you prefer pizza with a crispier crust, preheat a pizza stone in the oven and slide the Hawaiian pizza onto it using a pizza peel.
  • Run the red onion under water to remove its harsh bite.
  • Cut your toppings into small pieces so they cook fully in the oven.

Such a tasty pizza recipe! Pizza crust is layered with smokey bbq sauce, chicken pieces, creamy mozzarella, sweet pineapple, and flavorful red onion and cilantro.

  • 1 lb pizza dough (, homemade or store bought)
  • 12 oz boneless skinless chicken breasts
  • 2 Tbsp olive oil (, divided)
  • 3/4 cup barbecue sauce (, divided)
  • 4 slices bacon (, cooked and chopped)
  • 2 cups (8 oz) low-moisture mozzarella, shredded
  • 1 cup chopped fresh pineapple ((chop into small pieces))
  • 1/3 of a medium red onion (, sliced thin and run under cool water to remove harsh bite)
  • 1/4 cup cilantro (, chopped or torn)
  • 1 cloves garlic (, minced)
  • Freshly ground black pepper
  1. Preheat oven to 475 degrees F.

  2. Preheat a grill to medium-high heat. Brush both sides of chicken lightly with 1 Tbsp of the olive oil and season both sides with salt and pepper. Grill until cooked through, rotating once halfway through cooking, and brushing with 3 Tbsp of the barbecue sauce during last 1 - 2 minutes of grilling.   4. Cut chicken into cubes. Brush dough with remaining barbecue sauce (1/2 cup + 1 Tbsp). Top with 1/3 of the mozzarella then top with chicken, pineapple, bacon and red onion. Sprinkle with remaining mozzarella and season with freshly ground black pepper. 

  5. Bake in preheated oven until crust is golden, about 11 - 13 minutes. Slice and serve warm topped with cilantro.

Since it has started to warm up outside and I can finally use my grill again, I've decided I'm just going to start making this salad at home.

This tastes just like the restaurant version but I'm sure it cost half the price. Not to mention my corn tortilla strips are way better than theirs because they're fresh :).

I love salads like this because they are healthy and filling and they even make great left overs for lunch the next day (as long as you don't toss it all together of course).

This one has all the flavors of a Southwestern meal in one loaded salad (and no I'm not skimp with the toppings.

It's always crazy when you pay $10 for a salad and they put 3 tiny pieces of chicken on top. If it's going to be a meal for me it needs to have a lot in it).

The other great thing about this salad is it's a mans salad too, my husband doesn't go for any of those dainty salads that have a few pieces of fruit and a light vinaigrette for a main meal. We can both agree on this one.

You can also adjust your ingredients for taste—I love a lot of balsamic vinegar, but if your family likes sweeter barbecue you can increase the sugar and apple juice. Grilled Chicken with Balsamic Barbecue Sauce

Tender chicken breast grilled to perfection and basted with a flavorful, tangy, not overly sweet sauce that will have you coming back for more.

  • 6 medium boneless (, skinless chicken breasts halves (thighs would work great too))
  • Salt and pepper (, to taste)
  • Olive Oil for brushing grill
  • 1 Recipe Balsamic Barbecue Sauce (, recipe follows)

Balsamic Barbecue Sauce

  • 1/2 cup granulated sugar
  • 2 1/2 tsp cornstarch
  • 1/2 cup balsamic vinegar
  • 1/4 cup water
  • 1/4 cup apple juice
  • 1/4 cup tomato paste
  • 1 1/2 Tbsp molasses
  • 1 Tbsp low sodium soy sauce
  • 1 Tbsp Worcestershire
  • 1 tsp liquid smoke (, hickory flavor)
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • 1/2 tsp salt (, or to taste)
  • 1/4 tsp freshly ground black pepper
  1. Preheat grill to medium high heat. Place chicken in a ziploc bag and somewhat gently pound chicken with the flat side of a meat mallet to an even thickness (you just don't want to destroy the chicken, that's why I say somewhat gently). Season each side of chicken breast with salt and pepper. 
  2. Brush grill lightly with olive oil. Place chicken on grill and cook (with lid closed) 5 - 8 minutes per side, until internal temperature reaches 160 degrees. 
  3. Baste chicken generously with Balsamic Barbecue Sauce during the last few minutes of grilling (if you want sauce for dipping reserve some of the sauce in a separate container so you aren't contaminating sauce while basting chicken, or alternately you could heat remaining barbecue sauce over stove top to kill bacteria). Serve warm.

Balsamic Barbecue Sauce

  1. In a medium saucepan, whisk together sugar and cornstarch. Stir in remaining ingredients then heat mixture just to a boil over medium high heat, stirring frequently. 
  2. Once mixture reaches a boil, reduce heat to low and simmer 15-20 minutes, stirring occasionally, until sauce has thickened and slightly reduced. Remove from heat, allow to cool and store in a non-reactive, airtight container in the refrigerator up to one week.

Hawaiian BBQ Pulled Chicken Sandwiches (Slow Cooker Recipe)

The perfect summer sandwich, sweet and saucy hawaiin chicken served in a bun with pineapple.

  • 2 lbs boneless skinless chicken breast halves
  • 1/2 cup ketchup
  • 1/3 cup pineapple juice ((apple juice could be substituted))
  • 1/4 cup low sodium soy sauce
  • 1/4 cup honey
  • 2 1/2 tsp molasses
  • 1/4 tsp liquid smoke
  • 1/4 tsp coconut extract
  • 1/2 tsp ground ginger
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • freshly ground black pepper (, to taste)
  • 1 Tbsp cold water
  • 1 Tbsp cornstarch
  • 2 Tbsp tomato paste

Glazed Pineapple

  • 6 fresh pineapple rings ((cut about 1/2" thick))
  • 4 Tbsp brown sugar (, divided)
  • 1 Tbsp butter (, divided)
  1. Place chicken in a 6 or 7 quart slow cooker. In a mixing bowl, whisk together ketchup, pineapple juice, low sodium soy sauce, honey, molasses, liquid smoke, coconut extract, ginger, onion powder, garlic powder and black pepper. Pour sauce over chicken in slow cooker, cover with lid and cook on low heat for 5 - 6 hours. 
  2. Remove chicken from slow cooker, shred and set aside. In a medium saucepan, whisk together cold water and cornstarch, pour in sauce from slow cooker and add tomato paste. 
  3. Bring mixture to a boil over medium high heat, stirring frequently, then reduce heat and simmer 30 seconds, stirring constantly, until thickened. Return chicken to slow cooker (or the mixing bowl) and pour sauce over chicken, toss to evenly coat. Serve warm on hamburger buns, along with optional glazed or grilled pineapple and optional diced green onions (grilled red onions would be good too).

Glazed Pineapple

  1. Working in 2 separate batches, melt 1 Tbsp butter in a 10 inch non-stick skillet. Sprinkle 1 Tbsp brown sugar among one side of 3 pineapple rings (about 1 tsp per each), add pineapple to skillet (brown sugar side down) and saute over medium high heat until golden on bottom about 3 minutes. 
  2. Sprinkle another 1 Tbsp over the tops of pineapple rings in pan (again 1 tsp per each), then flip and cook opposite side until lightly browned about 3 minutes. Repeat this process with remaining 3 pineapple rings.
