Our Favorite Chia Pudding!

Chia seed pudding is a healthy pudding made with rich in fiber chia seeds, some type of milk, a little sweetener, and optional flavorings and toppings. It is usually made from vegan ingredients and it's easy as can be to make!

All the ingredients are simply mixed together in a jar or bowl then rested overnight in the fridge so chia seeds have time to plump and soften. Then the next day it's ready to enjoy and you end with the perfect consistency and texture.

I didn't used to care much for chia pudding but that was until I started adding canned coconut milk (in addition to a non-dairy milk) for an extra boost of creamy richness, and also I added some flavorful extract (my favorite is coconut here).

I found it doesn't need a whole lot of either to really take it from bland and boring to something you'll actually crave.

Then of course, to really highlight it, I recommend finishing it with fresh diced fruit (or puree). My favorites are peaches or mangoes, especially with this coconut vibe we have going.

But truly it's a blank canvas, start with the main base then finish it off with toppings to your hearts content. And for more of a dessert, be sure to try the tempting chocolate variation as well!

A Healthy Dessert-Like Protein Shake Recipe!

Cheesecake in a healthy breakfast shake form? Hand it over!

I've been on a smoothie/shake craze lately and I'm sure there's more to come. I'm making them everyday for breakfast around here lately. They are fun to experiment with and they are incredibly versatile.

Today we had these Blueberry Cheesecake Protein Breakfast Shakes and I kid you not they taste so much like blueberry cheesecake but in a healthier smoothie/shake form.

I'm slightly obsessed! Cheesecake is one of my favorite desserts now to be able to eat it for breakfast is a dream!

If you find you want it a little sweeter of course you could add in another teaspoon or two of honey. I definitely recommend using low-fat cottage cheese instead of fat free here, the two just taste so much different to me and I actually tested this shake with both kinds and preferred the low-fat.

It's worth the 20 extra calories, trust me. Plus, a little fat helps us feel fuller and absorb nutrients better, right?

I get bored with your common smoothie recipes (we really don't need another strawberry and banana remix). This recipe shakes things up by using winter produce, which gives more vibrant flavor and stronger nutrition than frozen fruit. It's made with cranberries, pomegranate juice, bananas, almond milk, greek yogurt, and ice. It's so easy to make and can be ready in minutes.

I love this Cranberry Pomegranate Smoothie recipe in the fall and winter when fresh cranberries are in season. It's a great way to eat raw cranberries! You can also make this a mixed berry smoothie by adding raspberries, or toss in any of the leftover fruit or frozen produce you want to clean out of your fridge. If you end up with leftover cranberries from Thanksgiving or Christmas, don't let them go to waste! You can even freeze them in single serving portions, ready for blending whenever you're ready!

Pomegranate Smoothie Recipe

Feel free to halve the recipe if you only need enough for 1. You may also want to vary this recipe based on your preference for texture and tartness. Add more dairy or coconut milk for a creamy taste and easier pour. A frozen banana, tablespoons of honey, or maple syrup can be used as a sweetener to balance the tart flavor. As always, you can make this a green smoothie by adding a few handfuls of spinach or kale. A scoop of a neutral or complementary flavor of protein powder (like vanilla) would be a great addition, too. I like to dot a few pomegranate arils on top of the smoothie for a garnish!

Cranberry Pomegranate Smoothie

A bright, nutritious smoothie that's packed with good for you ingredients. 

  • 1 cup cranberries (, frozen)
  • 1/2 cup pomegranate juice
  • 1/2 cup original almond milk
  • 1 (5.3 oz) container vanilla greek yogurt
  • 1 very ripe banana (, peeled)
  • 1 cup ice
  1. Add all ingredients to blender and blend until smooth. Serve immediately.

But, then I think of other things I want to make and I add those other things to the list and, so as you can see everything just gets all jumbled together meaning these could have got lost somewhere on that list if I didn't just make them while I was thinking about them.

Especially the oat smoothie, it's like one of the best breakfasts ever because not only are they healthy but they are incredibly delicious!

This one is just as good as you'd imagine it to be. It's like a healthier peaches and cream smoothie and it's for breakfast!

Once you start making oat smoothies you'll see why I've converted. They are so quick to prepare, they are healthy and they keep me full until lunch rolls around. I also love that my kids are crazy about them too. It's a good way to pack some vitamins in to start their day.

Peach & Oat Breakfast Smoothie | Cooking Classy

The oat smoothie is so versatile, like this recipe for example you can use your favorite kind of milk (although if using dairy milk, you'll likely have to add a little sweetener like honey or agave since the original/coconut almond milks, soy and rice milk tend to be a little sweeter).

ou can switch out different flavors of yogurt (with this one I've tried mango and peach and love both, but like I listed in the recipe strawberry or coconut would also be excellent choices).
